Ramen Soup (yummy!)

Ramen Soup, many of you may have eaten the instant kind they now sell in most U.S. supermarkets, but something better does exist. Firs introduced to Japan by its neighboring country China, ramen soup has since become a traditional meal associated with the Japanese culture as a fast food. It is still made with chinese noodles and typically consists of broth, a type of protein (beef, pork, chicken, etc), at times some type of sea food, a boiled egg, and vegetables. Just to avoid any confusion these ingredients are not always used together, in other words, depending on the particular ramen recipe you are preparing you will use some of the above mentioned ingredients but not all of them at the same time. Below I have included a simple recipe for Shoyu Ramen (soy flavored ramen).


  • 2 Packs of raw Ramen Noodles
  • 2 Cups of Chicken Stock
  • 1 Cup Kombu Dashi Stock
  • 3 Tbsp Soy Sauce
  • 1 Tsp Salt
  • 1 Tsp Sugar
  • 1 Tbsp Sake
  • 1 Tsp Sesame Oil
  • 1 Tsp Chopped Ginger (fresh)
  • 1 Clove Garlic Finely Minced

In a deep pan heat up the sesame oil. Add the ginger and garlic, sautee until the garlic is golden brown. Lower the heat and then add the chicken stock and kombu dashi stock, bring to a boil. Once it has reached a full boil add the sake, soy sauce, sugar and salt and let boil for a few more mins. Remove the soup from the heat and let it sit for a moment (until the boiling completely stops).You may directly serve the soup into a different bowl or first strain it to remove the garlic and ginger (your choice). In the meanwhile proceed to boil the ramen noodles as the package indicates; usually 3 mins. in boiling water. Once the noodles have cooked you may add them to the soup.
